Gooey chocolate cherry cookies

If you like American-style cookies, you’ll love these pale, chewy delights. Plus, they can be baked from frozen

- 11/2 cups all-purpose flour

- 1/2 cup unsweetened cocoa powder

- 1 tsp baking powder

- 1/2 tsp salt

- 1/2 cup unsalted butter, softened

- 1/2 cup sugar

- 1/2 cup brown sugar

- 1 egg

- 1 tsp vanilla extract

- 1/2 cup semisweet chocolate chips

- 1/2 cup dried cherries

- Olive oil for greasing

1. Preheat your oven to 350 degrees F (175 degrees C). Grease a baking sheet with olive oil and set aside.

2. In a medium-sized mixing bowl, sift together the flour, cocoa powder, baking powder, and salt. Set aside.

3. In a separate mixing bowl, cream together the softened butter, sugar, and brown sugar until light and fluffy.

4. Beat in the egg and vanilla extract until well combined.

5. Slowly add the dry ingredients to the wet ingredients, mixing until a dough forms.

6. Fold in the chocolate chips and dried cherries.

7. Roll the cookie dough into small balls, about 1 inch in diameter, and place them onto the prepared baking sheet, leaving about 2 inches of space between each cookie.

8. Using the back of a fork, gently press down on the cookies to slightly flatten them.

9. Bake the cookies for 10-12 minutes, until the edges are set and the tops are slightly cracked.

10. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

11. Enjoy your gooey chocolate cherry cookies with a glass of milk or a cup of hot cocoa! Store any leftovers in an airtight container at room temperature.
