Greek Stuffed Chicken

On its own, chicken breast is sort of a blank canvas. But stuff it with Greek salad-inspired ingredients, and you've got an wildly flavorful and fun weeknight dinner. Hot tip: If you've got a mandoline, now's the time to use it!

Ingredients:

- 4 chicken breasts

- 1 cup feta cheese, crumbled

- 1/2 cup black olives, chopped

- 1/4 cup sun-dried tomatoes, chopped

- 1 tablespoon olive oil

- 1 teaspoon dried oregano

- 1 teaspoon dried basil

- 1/2 teaspoon garlic powder

- Salt and pepper, to taste

Direction:

1. Preheat your oven to 375°F (190°C).

2. In a small bowl, mix together the feta cheese, black olives, and sun-dried tomatoes.

3. Using a sharp knife, make a slit in the side of each chicken breast to create a pocket.

4. Stuff each chicken breast with the feta mixture, dividing it evenly between the four breasts.

5. In a separate small bowl, mix together the olive oil, dried oregano, dried basil, garlic powder, salt, and pepper.

6. Brush the seasoned oil mixture over the stuffed chicken breasts, making sure to coat both sides.

7. Place the chicken breasts in a baking dish and bake for 20-25 minutes, or until the chicken is cooked through and no longer pink in the middle.

8. Serve the Greek stuffed chicken with your choice of side dishes, such as roasted vegetables or rice.
