Green peppercorn sauce

Green peppercorns are gentler than black peppercorns, which tend to give a spicy edge to peppercorn sauce. If you want a creamer pepper sauce with your steak this is a great recipe to try.

Ingredients:

- 1 tablespoon olive oil

- 1/2 cup green peppercorns

- 1 shallot, finely chopped

- 2 cloves of garlic, minced

- 1 cup beef broth

- 1/2 cup heavy cream

- Salt and pepper to taste

- Dried thyme

- Dried rosemary

Direction:

1. In a medium-sized saucepan, heat olive oil over medium heat.

2. Add the chopped shallot and minced garlic to the pan and sauté until softened.

3. Pour in the beef broth and bring it to a simmer.

4. Add the green peppercorns to the pan and let it simmer for 5 minutes.

5. Using a wooden spoon, gently crush the peppercorns to release their flavor.

6. Stir in the heavy cream and let the mixture simmer for an additional 5 minutes.

7. Season the sauce with salt, pepper, and a pinch of dried thyme and rosemary.

8. Continue to simmer the sauce until it thickens to your desired consistency.

9. Taste and adjust the seasoning as needed.

10. Once the sauce is ready, remove it from the heat and let it cool for a few minutes.

11. Serve the green peppercorn sauce over your favorite steak, chicken, or pork dish.
