Make lamb steaks go further with this simple light supper idea
Ingredients:
-1 lb ground lamb
-1 cup hummus
-4 flatbreads
-1 tbsp olive oil
-1 tsp harissa paste
-1 tsp garlic powder
-1 tsp cumin
-1 tsp paprika
-1 tsp salt
-1 tsp pepper
-1/4 cup diced red onion
-1/4 cup diced tomatoes
-1/4 cup crumbled feta cheese
-Fresh parsley, chopped (optional)
Direction:
1. Preheat your oven to 400 degrees Fahrenheit.
2. In a small bowl, mix together the harissa paste, garlic powder, cumin, paprika, salt, and pepper. Set aside.
3. In a large skillet, heat the olive oil over medium-high heat. Add the ground lamb and cook until it is browned and fully cooked, about 5-7 minutes.
4. Once the lamb is cooked, add the harissa spice mixture to the skillet and stir to coat the lamb evenly. Cook for an additional 2-3 minutes.
5. While the lamb is cooking, place the flatbreads on a baking sheet and bake in the oven for 3-4 minutes to warm them up.
6. Once the flatbreads are warmed, remove them from the oven and spread a generous amount of hummus on each one.
7. Top the hummus with the cooked harissa lamb, diced red onion, diced tomatoes, and crumbled feta cheese.
8. Place the flatbreads back in the oven for an additional 5-7 minutes, or until the cheese is melted and the flatbreads are crispy.
9. Once done, remove the flatbreads from the oven and let them cool for a few minutes.
10. Garnish with fresh parsley, if desired, and serve hot. Enjoy your delicious and flavorful harissa lamb & hummus flatbreads!
