Harissa romesco sauce

Romesco sauce is a roasted red pepper sauce that originates from the Catalan region in Spain. Make your own this barbecue season, and add a little harissa to make sure it packs a punch.

Ingredients:

- 4 chicken breasts

- Salt and pepper

- Olive oil

- 1/4 cup harissa romesco sauce

- 1 tsp dried oregano

- 1 tsp smoked paprika

- 1 tsp garlic powder

- 1/2 tsp cumin

- Fresh parsley, chopped (optional)

 

 

 

Direction:

 

 

 

1. Preheat your oven to 375°F (190°C).

 

2. Season the chicken breasts with salt and pepper on both sides.

 

3. In a small bowl, mix together the harissa romesco sauce, dried oregano, smoked paprika, garlic powder and cumin.

 

4. In a large skillet, heat some olive oil over medium-high heat.

 

5. Place the chicken breasts in the skillet and cook for 2-3 minutes on each side, until they are lightly browned.

 

6. Remove the chicken from the skillet and place them on a baking dish.

 

7. Brush the harissa romesco sauce mixture on both sides of the chicken breasts.

 

8. Bake the chicken in the preheated oven for 15-20 minutes, or until cooked through.

 

9. Optional: During the last few minutes of baking, you can sprinkle some chopped parsley on top for added flavor and freshness.

 

10. Once the chicken is cooked, remove it from the oven and let it rest for a few minutes before serving.

 

11. Serve the Harissa Romesco Chicken with your choice of sides, such as rice, roasted vegetables, or a fresh salad.
