Healthy cookies

Grab a few of these energy-boosting healthy cookies for a quick breakfast, or offer as snacks to bridge the hunger gap before dinner. Enjoy with yogurt and fruit

Ingredients:

- 2 ripe bananas

- 1 cup oats

- 1/4 cup honey

- 1 tsp cinnamon

- 1 tsp vanilla extract

- 1/4 cup chopped nuts (optional)

- 2 tbsp olive oil

- Pinch of salt

Direction:

Instructions:

1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.

2. In a mixing bowl, mash the bananas until smooth.

3. Add in the oats, honey, cinnamon, vanilla extract, chopped nuts (if using), olive oil, and salt. Mix well until all the ingredients are well combined.

4. Scoop out about 1 tablespoon of the mixture and form into a ball. Place it on the prepared baking sheet and flatten it slightly with your hand. Repeat with the remaining mixture, leaving about an inch of space between each cookie.

5. Bake the cookies for 15-20 minutes, or until they are golden brown around the edges.

6. Once done, remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

7. Store the cookies in an airtight container for up to 3 days. Enjoy your healthy and delicious cookies as a snack or for breakfast!
