Hot and sour salmon wonton tostadas

"These little Asian-inspired tostadas are a one-bite delight! With a combination of sweet-and-sour caramel, fresh Asian herbs, spicy chilli and crunchy wonton, they're an explosion of texture and flavour. And the best part? Ingredients:

- 1 package of wonton wrappers

- 1 pound of salmon, cut into bite-sized pieces

- 1/4 cup olive oil

- Salt and pepper

- 2 tablespoons soy sauce

- 1 tablespoon rice vinegar

- 1 tablespoon honey

- 1 teaspoon chili garlic sauce

- 1 teaspoon grated ginger

- 1 teaspoon minced garlic

- 1/4 cup sliced scallions

- 1/4 cup chopped cilantro

- 1/4 cup shredded carrot

- 1/4 cup shredded cabbage

- Lime wedges, for serving

Direction:

1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

 

2. In a small bowl, mix together the soy sauce, rice vinegar, honey, chili garlic sauce, grated ginger, and minced garlic. Set aside.

 

3. Season the salmon pieces with salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Once hot, add the salmon pieces and cook for 3-4 minutes on each side, until they are cooked through and golden brown. Remove from the heat and set aside.

 

4. Lay the wonton wrappers on the prepared baking sheet in a single layer. Brush each wrapper lightly with olive oil. Bake for 6-8 minutes, until they are golden and crispy.

 

5. In the meantime, heat the soy sauce mixture in the same skillet used to cook the salmon. Bring to a simmer and add the scallions, cilantro, shredded carrot, and shredded cabbage. Cook for 1-2 minutes, until the vegetables are slightly softened.

 

6. To assemble the tostadas, place a spoonful of the soy sauce vegetable mixture on top of a crispy wonton wrapper. Top with a piece of cooked salmon. Repeat with the remaining wrappers and ingredients.

 

7. Serve the hot and sour salmon wonton tostadas with lime wedges on the side for squeezing over the top. Enjoy as a delicious and flavorful appetizer or light meal!
