Instant Pot Jambalaya
The Instant Pot is a great way to make jambalaya, a Cajun classic, in just an hour. On top of being super-quick dinner to cook, you won’t need pre-cooked rice or meats. All the rice, veggies, broth, and chicken go in the Instant Pot together and get cooked under high pressure for the perfect, fluffy jambalaya.
Direction:
1. Turn on the Instant Pot and select the "Sauté" function. Heat the olive oil in the pot.
2. Add the chicken and sausage to the pot and cook until browned, stirring occasionally.
3. Once the meat is cooked, add in the chopped onion, bell pepper, and garlic. Cook for an additional 2-3 minutes until the vegetables are slightly softened.
4. Pour in the diced tomatoes (with juices) and chicken broth. Stir in the Cajun seasoning, thyme, oregano, smoked paprika, cayenne pepper, and salt and pepper to taste.
5. Stir in the rice, making sure that it is evenly coated with the liquid and spices.
6. Close the lid of the Instant Pot and make sure the pressure valve is set to "Sealing."
7. Select the "Manual" or "Pressure Cook" setting and cook on high pressure for 8 minutes.
8. Once the timer goes off, allow for a natural pressure release for 5 minutes, then carefully release the remaining pressure.
9. Open the lid and give the jambalaya a good stir. If the rice is still slightly al dente, you can select the "Sauté" function again and cook for an additional 1-2 minutes, stirring constantly.
10. Serve the jambalaya hot, garnished with chopped green onions if desired. Enjoy!
