Since the Instant Pot rose to insane popularity, our Test Kitchen has been hard at work recreating Southern classics that can be made using it.
Ingredients:
- 1 cup dried red beans
- 1 cup white rice
- 4 cups water
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 bay leaf
Direction:
1. Rinse and drain the red beans. Set aside.
2. In the instant pot, combine the white rice, water, and olive oil. Stir to mix well.
3. Add in the red beans, salt, black pepper, garlic powder, onion powder, paprika, dried thyme, dried oregano, and bay leaf.
4. Stir everything together until well combined.
5. Close the lid of the instant pot and set the valve to sealing.
6. Cook on high pressure for 25 minutes.
7. Once the cooking time is complete, allow for a natural pressure release for 10 minutes before manually releasing the remaining pressure.
8. Carefully remove the lid and give the rice and beans a stir.
9. Serve hot as a side dish or as a main course with your favorite toppings such as chopped green onions, shredded cheese, or sour cream. Enjoy!
