Italian-style roast cabbage wedges with tomato lentils

Roast cabbage for a veggie centrepiece, with crisp, caramelised leaves on the outside and a soft, sweet centre. Serve with our Italian-inspired lentils and golden roast new potatoes

Ingredients:

- 1 head of cabbage

- 2 tablespoons olive oil

- Salt

- Pepper

- Garlic powder

- Onion powder

- 1 can of diced tomatoes

- 1 cup of dried lentils

- 2 cups of water

- Italian seasoning

- Red pepper flakes (optional)

Direction:

1. Preheat your oven to 400°F (200°C).

2. Cut the head of cabbage into 8 wedges, removing the tough core at the bottom.

3. Place the cabbage wedges on a baking sheet and drizzle with 2 tablespoons of olive oil. Season with salt, pepper, garlic powder, and onion powder on both sides.

4. Roast the cabbage wedges in the oven for 25-30 minutes, or until they are tender and slightly charred on the edges.

5. While the cabbage is roasting, prepare the lentils. In a pot, combine 1 cup of dried lentils with 2 cups of water and bring to a boil.

6. Reduce the heat and let the lentils simmer for 15-20 minutes, or until they are tender.

7. Drain any excess water from the lentils and add 1 can of diced tomatoes to the pot. Season with Italian seasoning and red pepper flakes (if desired) and let it simmer for another 5 minutes.

8. Serve the roasted cabbage wedges on a plate and top with the tomato lentils. Optional: you can also sprinkle some extra Italian seasoning on top for added flavor.
