Lamb and pomegranate skewers

Marinade juicy lamb fillets in reduced pomegranate juice for an extra boost of Middle-Eastern inspired flavours.

Ingredients:

- 1 lb lamb, cut into bite-sized pieces

- 1 pomegranate, seeds removed

- Olive oil

- Salt

- Black pepper

- Cumin

- Garlic powder

- Wooden skewers, soaked in water for 30 minutes

Direction:

1. In a bowl, mix together 1 tablespoon of olive oil, 1 teaspoon of salt, 1 teaspoon of black pepper, 1 teaspoon of cumin, and 1 teaspoon of garlic powder.

 

2. Add the lamb pieces to the bowl and toss to coat evenly with the marinade. Let the lamb marinate for at least 30 minutes, or overnight for best flavor.

 

3. Preheat your grill to medium-high heat. Alternatively, you can use a grill pan or broil the skewers in the oven.

 

4. Thread the marinated lamb pieces onto the soaked wooden skewers, alternating with pomegranate seeds.

 

5. Place the skewers on the grill or grill pan and cook for 6-8 minutes, turning occasionally, until the lamb is cooked to your desired level of doneness.

 

6. Once the lamb is cooked, remove the skewers from the heat and let them rest for a few minutes.

 

7. Drizzle some olive oil over the skewers and sprinkle with a pinch of salt and black pepper.

 

8. Serve the lamb and pomegranate skewers hot with your favorite side dishes, such as a Greek salad or grilled vegetables. Enjoy!
