- 1 lb ground lamb
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp paprika
- 1 tsp garlic powder
- Salt and pepper, to taste
- 2 tbsp olive oil
- Wooden skewers
- Olive oil, for brushing

1. In a large bowl, combine the ground lamb with cumin, coriander, paprika, garlic powder, salt and pepper. Mix well until all the spices are evenly distributed.
2. Using your hands, form the lamb mixture into small, cylinder-shaped koftas. You should be able to make 8-10 koftas with 1 lb of ground lamb.
3. Preheat a grill or grill pan to medium-high heat. Brush the grill with olive oil to prevent sticking.
4. Thread the lamb koftas onto wooden skewers, about 3-4 koftas per skewer.
5. Brush the koftas with olive oil on all sides. This will help them stay moist and prevent them from sticking to the grill.
6. Place the kofta skewers on the grill and cook for 12-15 minutes, turning occasionally, until they are cooked through and lightly charred on the outside.
7. Remove the skewers from the grill and let them rest for a few minutes.
8. Serve the lamb kofta skewers hot with your choice of side dish, such as pita bread, tzatziki sauce, or a salad. Enjoy!
