Lemon-Batter Fish

Fishing is a popular recreational activity where we live, so folks are always looking for ways to prepare their catches. My husband ranks this as one of his favorite fish fry batters.

Ingredients:

-4 fillets of white fish (such as tilapia, cod or haddock)

-1/2 cup all-purpose flour

-1 egg

-1/4 cup milk

-1 teaspoon lemon zest

-1 teaspoon dried oregano

-1 teaspoon garlic powder

-1/4 teaspoon salt

-1/4 teaspoon black pepper

-2 tablespoons olive oil

-1 lemon, sliced

Direction:

Instructions:

1. In a shallow dish, mix together the flour, dried oregano, garlic powder, salt, and black pepper.

2. In a separate bowl, beat the egg and milk together.

3. Dip each fillet of fish in the egg mixture, then coat it in the flour mixture. Shake off any excess flour.

4. Heat the olive oil in a large skillet over medium heat.

5. Once the oil is hot, add the coated fish fillets to the skillet. Cook for about 3-4 minutes on each side, until golden brown and crispy.

6. While the fish is cooking, sprinkle the lemon zest over the fillets and place a few slices of lemon on top of each fillet.

7. When the fish is fully cooked and flaky, remove it from the skillet and place it on a plate lined with paper towels to absorb any excess oil.

8. Serve the lemon-batter fish hot with extra lemon slices for garnish.
