- 1 package pre-made pie crust dough

- 2 lemons

- 1/2 cup sugar

- 1/4 cup butter

- 2 eggs

- 1/4 cup olive oil

- 1 tsp vanilla extract

- 1 tsp ground cinnamon

- 1/4 tsp ground nutmeg

- Powdered sugar for dusting

1. Begin by preheating your oven to 375°F (190°C). Prepare a standard muffin tin by lightly greasing it with some olive oil.

2. In a small saucepan, melt the butter over medium heat. Once melted, remove the pan from the heat and set it aside to cool.

3. Roll out the pre-made pie crust dough on a lightly floured surface. Using a round cookie cutter or a glass, cut out circles of dough that will fit into the muffin tin cups. Gently press the dough into the muffin cups, making sure it covers the bottom and sides.

4. In a small bowl, zest the two lemons and set the zest aside. Then, juice the lemons and set the juice aside.

5. In a separate bowl, beat the eggs and sugar together until well combined. Add in the cooled melted butter, olive oil, vanilla extract, ground cinnamon, and ground nutmeg. Mix everything together until smooth.

6. Slowly pour in the lemon juice and mix until well incorporated into the batter. Finally, stir in the lemon zest.

7. Spoon the lemon custard mixture into the prepared pie crust dough cups, filling them about 3/4 full.

8. Bake the doughnuts in the preheated oven for 20-25 minutes, or until the edges are golden brown and the custard is set.

9. Once done, remove the doughnuts from the oven and let them cool for a few minutes in the muffin tin. Then, carefully remove them from the tin and place them on a wire rack to cool completely.

10. Before serving, dust the doughnuts with powdered sugar for a finishing touch. These lemon custard pie maker doughnuts can be enjoyed warm or at room temperature. Enjoy!
