Lemon Mushroom Chicken

There's a lot of flavor in this dish. The best part? It doesn't seem light at all!

Ingredients:

- 4 chicken breasts

- 8 oz. mushroom, sliced

- 2 lemons

- Olive oil

- Salt

- Pepper

- Dried thyme

- Dried parsley

- Garlic powder

Direction:

Instructions:

1. Preheat your oven to 375°F (190°C).

2. In a small bowl, mix together 2 tablespoons of olive oil, 1 teaspoon of dried thyme, 1 teaspoon of dried parsley, 1 teaspoon of garlic powder, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper.

3. Place the chicken breasts on a cutting board and drizzle the olive oil mixture over the chicken, making sure to coat both sides.

4. Heat a large skillet over medium-high heat and add a drizzle of olive oil. Once the skillet is hot, add the chicken breasts and cook for about 3-4 minutes on each side, until both sides are golden brown.

5. Remove the chicken from the skillet and place them in a baking dish.

6. In the same skillet, add a little more olive oil if needed and sauté the mushrooms until they are soft and lightly browned, about 5 minutes.

7. Spread the sautéed mushrooms on top of the chicken breasts in the baking dish.

8. Cut one of the lemons in half and squeeze the juice over the chicken and mushrooms. Slice the other lemon into thin slices and place them on top of the mushrooms.

9. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.

10. After 20 minutes, remove the foil and continue to bake for an additional 10-15 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).

11. Serve the lemon mushroom chicken with your favorite side dishes and enjoy! The lemon juice and seasoning will create a delicious sauce for the chicken and mushrooms.
