Lemonade Scones

This 3 ingredient lemonade scones recipe is the easiest way to make lemonade scones, but using the pie maker to cook them makes them even quicker and easier.

Ingredients:

- 1 cup self-raising flour

- 1/2 cup lemonade

- 1/2 cup thickened cream

- Olive oil

- Salt

- Dried thyme

Direction:

1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

2. In a large mixing bowl, combine 1 cup of self-raising flour, a pinch of salt, and 1 teaspoon of dried thyme. Mix well to evenly distribute the seasoning.

3. Make a well in the center of the flour mixture and pour in 1/2 cup of lemonade and 1/2 cup of thickened cream.

4. Using a wooden spoon or spatula, mix the wet and dry ingredients together until a soft and slightly sticky dough forms. Be careful not to overmix as this can result in tough scones.

5. Turn the dough out onto a lightly floured surface and gently knead a few times to bring it together.

6. Using your hands, shape the dough into a large disc about 1 inch thick.

7. Using a sharp knife or cookie cutter, cut the dough into desired scone shapes. You can also use a drinking glass to cut out round scones.

8. Place the scones onto the prepared baking sheet and brush the tops with a little olive oil. This will give them a beautiful golden color and crispy crust.

9. Bake the scones for 15-20 minutes, or until they are golden brown and cooked through.

10. Once done, remove the scones from the oven and let them cool for a few minutes before serving.

11. Serve the lemonade scones warm with a dollop of cream or your favorite jam. Enjoy with a cup of tea or coffee.
