Little caramelised quiches

Tiny but mighty, these little flavour bombs pack a delicious punch. The buttery pastry cases are filled with bacon and cheese, just perfect for entertaining or the kids’ lunch boxes. But it's the addition of a honey mustard glaze that really takes these more-ish bites to the next level. Using store bought pastry cuts down on prep time, too, so you can enjoy these crowd pleasers straight from the oven in under 30 minutes.

Ingredients:

- 1 package of pre-made pie crust

- 6 eggs

- 1/2 cup of milk

- 1/4 cup of grated Parmesan cheese

- 1/4 cup of shredded cheddar cheese

- 1/4 cup of diced cooked ham

- 1/4 cup of diced onion

- 1 tablespoon of olive oil

- Salt and pepper to taste

- Dried parsley for garnish (optional)

Instructions:

 

 

1. Preheat your oven to 375°F (190°C).

 

2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and cook until softened and caramelized, about 5 minutes. Set aside.

 

3. In a mixing bowl, beat together 6 eggs and 1/2 cup of milk. Add 1/4 cup of grated Parmesan cheese and 1/4 cup of shredded cheddar cheese. Season with salt and pepper to taste and mix well.

 

4. Unroll the pre-made pie crust and cut out circles using a round cookie cutter or a glass rim. Place the circles into a muffin tin, pressing them gently to form mini crusts.

 

5. Divide the caramelized onions and diced ham into each mini crust.

 

6. Pour the egg and cheese mixture over the onions and ham, filling each crust almost to the top.

 

7. Bake the quiches in the preheated oven for 20-25 minutes, or until the crust is golden brown and the filling is set.

 

8. Once done, remove the quiches from the oven and let them cool for a few minutes before carefully removing them from the muffin tin.
