Ingredients:
1 cup all-purpose flour
1/2 cup unsalted butter, softened
1/4 cup powdered sugar
1/2 tsp vanilla extract
1/4 tsp salt
1/4 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground ginger
1/4 tsp ground cloves
1/4 cup minced pie filling

Instructions:
1. In a large mixing bowl, combine the all-purpose flour, softened butter, powdered sugar, vanilla extract, salt, ground cinnamon, ground nutmeg, ground ginger, and ground cloves. Mix them together until a smooth dough forms.
2. Once the dough is formed, wrap it in plastic wrap and refrigerate for 30 minutes.
3. Preheat your oven to 350°F (180°C) and grease a baking sheet with olive oil.
4. Take the chilled dough out of the fridge and roll it out on a lightly floured surface to about 1/4 inch thickness.
5. Using a round cookie cutter, cut out circles from the dough and place them on the greased baking sheet.
6. In the center of each circle, place about a teaspoon of the minced pie filling.
7. Fold the edges of the dough towards the center, creating a small pocket with the filling inside.
8. Bake the cookies in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
10. Serve and enjoy your delicious mince pie cookies! You can also dust them with some extra powdered sugar for a sweeter touch. Store any leftovers in an airtight container.
