Use up a jar of mincemeat to make these festive cookies. They're a perfect addition to a Christmas dessert spread, or a great gift
Ingredients:
1 cup of mincemeat
1 1/2 cups of all-purpose flour
1/2 cup of granulated sugar
1/2 cup of unsalted butter
1/4 cup of olive oil
1 teaspoon of cinnamon
1/2 teaspoon of nutmeg
1/2 teaspoon of ground ginger
1/4 teaspoon of allspice
1/4 teaspoon of salt

Instructions:
1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) and line a baking sheet with parchment paper.
2. In a mixing bowl, cream together the unsalted butter, olive oil, and granulated sugar until well combined.
3. In a separate bowl, whisk together the all-purpose flour, cinnamon, nutmeg, ground ginger, allspice, and salt.
4. Gradually add the dry ingredients to the butter and sugar mixture, mixing until a dough forms.
5. Gently fold in the mincemeat, making sure it is evenly distributed throughout the dough.
6. Using a cookie scoop or spoon, scoop out dough balls and place them on the prepared baking sheet, leaving about 2 inches of space between each cookie.
7. Use a fork to lightly press down on each dough ball to flatten it slightly.
8. Bake for 12-15 minutes, or until the edges of the cookies are golden brown.
9. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
