This hearty and healthy stew is perfect to share with your friends and family
Ingredients:
- 1 lb lamb, cut into cubes
- 1 cup dried apricots
- 1/2 cup whole almonds
- 1/4 cup fresh mint leaves
- 2 tbsp olive oil
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp paprika
- Salt and pepper, to taste
Direction:
1. In a bowl, mix together the cumin powder, coriander powder, paprika, salt, and pepper.
2. Add the cubed lamb to the bowl and coat it well with the spice mixture. Let it marinate for 30 minutes.
3. Heat 2 tbsp of olive oil in a large pan over medium-high heat.
4. Add the marinated lamb cubes to the pan and cook for about 5 minutes, stirring occasionally.
5. Once the lamb is browned, add the dried apricots and whole almonds to the pan. Stir to combine.
6. Reduce the heat to medium-low and let the lamb cook for an additional 10 minutes, or until it is tender.
7. While the lamb is cooking, roughly chop the mint leaves.
8. Once the lamb is fully cooked, remove the pan from heat and stir in the chopped mint leaves.
9. Serve the Moroccan lamb with rice or couscous, and enjoy the delicious combination of sweet and savory flavors.
