Nacho Pie

In place of the ground beef and mozzarella cheese, consider topping this zesty pie with lean ground sausage and cheddar cheese. It tastes just as good.


- 1 bag of tortilla chips

- 1 can of refried beans

- 1 cup of shredded cheese

- 1 diced tomato

- 1 diced onion

- 1 diced jalapeno

- Olive oil

- Salt

- Pepper

- Chili powder

- Cumin

- Paprika



1. Preheat your oven to 375°F (190°C).

2. In a large skillet, heat a drizzle of olive oil over medium heat. Add in the diced onion and jalapeno and sauté until softened, about 3-4 minutes.

3. Add in the can of refried beans and stir until warmed through. Season with a pinch of salt, pepper, chili powder, cumin, and paprika to taste. Set aside.

4. Take a 9-inch pie dish and line the bottom with a layer of tortilla chips.

5. Spread the bean mixture over the tortilla chips, making sure to spread it evenly.

6. Sprinkle half of the shredded cheese over the bean mixture.

7. Arrange another layer of tortilla chips on top of the cheese. Repeat the layers one more time, ending with a final layer of cheese.

8. Top the pie with diced tomatoes and a sprinkle of the dried spices (salt, pepper, chili powder, cumin, and paprika).

9. Place the pie in the oven and bake for 10-15 minutes, or until the cheese is melted and bubbly.

10. Once done, remove from the oven and let it cool for a few minutes before slicing and serving.
