New Orleans-Style Beignets

Want to celebrate Mardi Gras from the comfort of your kitchen? Make beignets. Liberally dusted in confectioners’ sugar, these pillowy deep-fried doughnuts will make you feel like you're at the famous Cafe du Monde in just one bite.

Ingredients:

- 2 cups all-purpose flour

- 2 teaspoons baking powder

- ½ teaspoon salt

- ½ cup granulated sugar

- 1 egg

- ½ cup milk

- 1 teaspoon vanilla extract

- Olive oil

- Powdered sugar (for dusting)

- Ground cinnamon (optional)

Direction:

1. In a large bowl, mix together 2 cups of all-purpose flour, 2 teaspoons of baking powder, and ½ teaspoon of salt.

 

2. In a separate bowl, beat ½ cup of granulated sugar and 1 egg until well combined.

 

3. Slowly pour in ½ cup of milk and 1 teaspoon of vanilla extract into the sugar and egg mixture, stirring constantly.

 

4. Gradually add the dry ingredients into the wet mixture, stirring until a smooth dough forms.

 

5. On a floured surface, roll out the dough to about ¼ inch thickness.

 

6. Use a sharp knife or pizza cutter to cut the dough into small rectangles, about 2 inches by 3 inches in size.

 

7. Heat a large skillet or deep fryer over medium-high heat, adding enough olive oil to coat the bottom of the pan.

 

8. Once the oil is hot, carefully place the dough rectangles into the pan, frying for about 1-2 minutes on each side, until golden brown.

 

9. Use a slotted spoon or tongs to remove the beignets from the pan and onto a plate lined with paper towels to absorb any excess oil.

 

10. In a small bowl, mix together ½ cup of powdered sugar and a sprinkle of ground cinnamon (if desired).

 

11. While the beignets are still warm, dust them generously with the powdered sugar mixture.

 

12. Serve the New Orleans-style beignets warm and enjoy as a delicious dessert or snack!
