Ingredients:
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 cup unsalted butter
- 1 tsp vanilla extract
- 1 egg
- Olive oil (for greasing)
- Chopped nuts or dried fruits (optional)
- Seasoning and dried spices (optional)

Instructions:
1. Preheat your oven to 375°F (190°C) and grease a baking sheet with olive oil.
2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
3. Add in the vanilla extract and egg, and mix until well combined.
4. Gradually add in the flour, mixing well after each addition. The dough should come together and be slightly crumbly.
5. If desired, you can add in chopped nuts or dried fruits to the dough for added texture and flavor.
6. Take tablespoon-sized portions of the dough and roll them into balls. Place them onto the greased baking sheet, leaving some space in between each cookie.
7. Using a fork, gently press down on each cookie to flatten it slightly and create a criss-cross pattern on top.
8. If desired, you can sprinkle some seasoning or dried spices on top of the cookies for added flavor.
9. Bake the cookies for 8-10 minutes, or until they are lightly golden brown on the edges.
10. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
11. Once cooled, store the Norwegian butter cookies in an airtight container to keep them fresh. Enjoy them with a cup of coffee or tea for a delicious treat!
