Oaty hazelnut cookies

Soft and slightly chewy, these oaty cookies contain apple and maple syrup instead of sugar. They're packed with hazelnuts which are a good source of vitamins and minerals

Ingredients:

- 1 cup rolled oats

- 1/2 cup hazelnuts, chopped

- 1/2 cup all-purpose flour

- 1/2 cup brown sugar

- 1/4 cup olive oil

- 1 tsp vanilla extract

- 1/2 tsp ground cinnamon

- 1/4 tsp salt

Direction:

Instructions:

1. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

2. In a mixing bowl, combine the rolled oats, chopped hazelnuts, all-purpose flour, brown sugar, ground cinnamon, and salt.

3. In a separate bowl, mix together the olive oil and vanilla extract.

4. Pour the wet ingredients into the dry ingredients and stir until well combined.

5. Using your hands, form the dough into small balls and place them on the prepared baking sheet.

6. Use a fork to gently press down on each ball, flattening them slightly.

7. Bake for 10-12 minutes, or until the edges are golden brown.

8. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

9. Once cooled, sprinkle some extra brown sugar or cinnamon on top if desired.
