One-Pan Cajun Orzo with Sausage

A dish this easy and good doesn't come along every day. It's creamy and spicy with all of the comfort and ease you crave for a weeknight dinner. It comes together in just about 30 minutes, and the cleanup is even faster, which means you can make this even on those night you feel you have no time to make a satisfying dinner.

Ingredients:

- 1 cup uncooked orzo pasta

- 1 tablespoon olive oil

- 1/2 pound smoked sausage, sliced

- 1 red bell pepper, diced

- 1 green bell pepper, diced

- 1 yellow onion, diced

- 2 cloves of garlic, minced

- 1 teaspoon Cajun seasoning

- 1/2 teaspoon dried thyme

- 1/2 teaspoon dried oregano

- Salt and pepper to taste

- 2 cups chicken broth

- Optional: chopped fresh parsley for garnish

Direction:

1. In a large skillet, heat 1 tablespoon of olive oil over medium heat.

 

2. Add the sliced sausage to the skillet and cook for about 5 minutes until browned.

 

3. Remove the sausage from the skillet and set aside.

 

4. In the same skillet, add the diced red and green bell peppers, onion, and minced garlic. Cook for about 3-4 minutes until they start to soften.

 

5. Add the uncooked orzo pasta to the skillet and stir to combine with the vegetables. Allow the orzo to toast for 1-2 minutes.

 

6. Sprinkle 1 teaspoon of Cajun seasoning, 1/2 teaspoon of dried thyme, and 1/2 teaspoon of dried oregano over the orzo and vegetables. Season with salt and pepper to taste.

 

7. Pour 2 cups of chicken broth into the skillet and stir to combine. Bring the mixture to a boil.

 

8. Once boiling, reduce the heat to low and let it simmer for about 10-12 minutes until the orzo is cooked and most of the liquid has been absorbed.

 

9. Stir in the cooked sausage and let it heat through for an additional 2-3 minutes.

 

10. Optional: Garnish with chopped fresh parsley before serving.

 

11. Serve the one-pan Cajun orzo with sausage hot and enjoy!
