one pan chicken quinoa

One-Pan Chicken & Quinoa

Here’s a quick and easy dinner that’s extra high in protein (thanks quinoa!) and takes very little effort. We love the Tex-Mex spices here; the chili powder and cayenne add a nice kick (but feel free to go lighter on them if you're sensitive to heat!).


 4 chicken breasts

- 1 cup quinoa

- 2 cups chicken broth

- 1 tablespoon olive oil

- Salt and pepper

- Garlic powder

- Onion powder

- Italian seasoning


1. Heat the olive oil in a large skillet over medium heat.

2. Season the chicken breasts with salt, pepper, garlic powder, onion powder, and Italian seasoning.

3. Place the chicken breasts in the skillet and cook for 5-6 minutes on each side, until golden brown.

4. Remove the chicken from the skillet and set aside.

5. In the same skillet, add the quinoa and toast it for 1-2 minutes.

6. Pour in the chicken broth and bring it to a boil.

7. Once boiling, reduce the heat to low and add the chicken breasts back into the skillet.

8. Cover the skillet and let it simmer for 15 minutes, or until the quinoa is fully cooked and the chicken is cooked through.

9. Serve hot and enjoy your delicious One-Pan Chicken & Quinoa dish! You can also garnish with some fresh herbs, if desired.
