- 1 tsp chili powder

- Salt and pepper, to taste

- Fresh cilantro, for garnish (optional)

1. Heat olive oil in a large skillet over medium heat.

2. Add the diced onion and minced garlic to the skillet and cook for 2-3 minutes, until they begin to soften.

3. Add the shrimp to the skillet and cook for 2-3 minutes on each side, until they are pink and cooked through. Remove the shrimp from the skillet and set aside.

4. In the same skillet, add the uncooked rice, salsa verde, cumin, chili powder, salt, and pepper. Stir to combine all the ingredients.

5. Place the cooked shrimp on top of the rice mixture in the skillet.

6. Pour 1 ½ cups of water into the skillet and stir everything together.

7. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 18-20 minutes, or until the rice is fully cooked and the liquid has been absorbed.

8. Once the rice is fully cooked, remove the skillet from the heat and let it sit for 5 minutes.

9. Fluff the rice with a fork and stir in the cooked shrimp.

10. Serve the One-Pan Salsa Verde Shrimp and Rice in a bowl and garnish with fresh cilantro, if desired. Enjoy!
