One-Skillet Creamy Thai Basil Chicken

This totally delicious mashup of coconut rice and Thai basil chicken gets dinner done in one skillet and brings all the flavors of Thai cuisine you crave into your home with ingredients you can find in most grocery stores.


- 1 lb chicken breast, cut into bite-sized pieces

- 1 tbsp olive oil

- Salt and pepper

- 1 onion, diced

- 3 cloves garlic, minced

- 1 red bell pepper, thinly sliced

- 1 cup coconut milk

- 2 tbsp soy sauce

- 2 tbsp fish sauce

- 1 tbsp brown sugar

- 1 tbsp lime juice

- 1 tsp red pepper flakes

- 1/4 cup fresh basil leaves, chopped

- 1/4 cup chopped peanuts, for topping

- Rice or noodles, for serving


1. In a large skillet, heat olive oil over medium-high heat. Season chicken pieces with salt and pepper and add them to the skillet. Cook until browned and cooked through, about 5-7 minutes.


2. Remove chicken from skillet and set aside. In the same skillet, add diced onion, minced garlic, and red bell pepper. Cook for 2-3 minutes until softened.


3. In a small bowl, mix together coconut milk, soy sauce, fish sauce, brown sugar, lime juice, and red pepper flakes. Pour this sauce into the skillet with the vegetables.


4. Add the cooked chicken back into the skillet and stir to combine with the sauce. Let everything simmer for 5-7 minutes until the sauce thickens and the flavors have melded together.


5. Just before serving, add in the chopped basil leaves and stir to incorporate them into the sauce.


6. Serve the creamy Thai basil chicken over rice or noodles and top with chopped peanuts for some extra crunch. Enjoy your delicious and easy one-skillet meal!
