Orange Chicken Stir Fry

Chicken breast meat stir fried with orange juice and zest, soy sauce, garlic and brown sugar, topped with bean sprouts and served over crispy chow mein noodles. A healthy, zesty stir fry treat guaranteed to excite the most finicky eaters!

Ingredients:

- 1 lb chicken breast, cut into bite-sized pieces

- 1 orange, juiced

- 2 cloves of garlic, minced

- 1 tsp grated ginger

- 1 onion, sliced

- 2 bell peppers, sliced

- 1 cup broccoli florets

- 1 tbsp olive oil

- Salt and pepper, to taste

- 1 tsp dried basil

- 1 tsp dried thyme

- 1 tsp dried oregano

- Steamed rice, for serving

Direction:

1. In a small bowl, mix together the orange juice, minced garlic, grated ginger, and a pinch of salt and pepper. Set aside.

 

2. In a large skillet or wok, heat the olive oil over medium-high heat.

 

3. Add the chicken pieces to the skillet and cook until they are golden brown and cooked through, about 5-6 minutes.

 

4. Remove the chicken from the skillet and set aside.

 

5. In the same skillet, add the sliced onion and bell peppers. Cook for 2-3 minutes, until they start to soften.

 

6. Add the broccoli florets to the skillet and cook for an additional 2-3 minutes.

 

7. Pour the orange juice mixture over the vegetables and stir to combine.

 

8. Add the cooked chicken back to the skillet and mix everything together.

 

9. Sprinkle the dried basil, thyme, and oregano over the stir fry. Stir to evenly distribute the spices.

 

10. Cook everything together for an additional 2-3 minutes, until the vegetables are cooked to your liking.

 

11. Serve the orange chicken stir fry over steamed rice. Enjoy!
