Orange & oregano pulled pork

Roast pulled pork in orange juice, along with bay, thyme, oregano and paprika for beautifully tender, flavourful meat. Serve with our chilli slaw on the side

Ingredients:

- 2 lbs pork shoulder

- 1 orange

- 2 tbsp olive oil

- 1 tsp dried oregano

- 1 tsp garlic powder

- 1 tsp onion powder

- Salt and pepper to taste

Direction:

1. Preheat your oven to 350°F (175°C).

2. In a small bowl, combine the dried oregano, garlic powder, onion powder, salt, and pepper. Mix well to create a seasoning blend.

3. Cut the pork shoulder into 2-inch cubes and place them in a large mixing bowl.

4. Pour the olive oil over the pork and add the seasoning blend. Use your hands to massage the seasoning and oil into the pork, making sure all pieces are evenly coated.

5. Heat a large skillet or Dutch oven over medium-high heat. Once hot, add the pork cubes and cook until browned on all sides, about 5 minutes.

6. While the pork is browning, zest the orange and set the zest aside. Cut the orange in half and squeeze the juice over the pork.

7. Once the pork is browned, transfer it to a roasting pan or Dutch oven. Pour any remaining juices from the skillet onto the pork.

8. Sprinkle the orange zest over the pork and cover the pan with foil or a lid.

9. Place the pan in the oven and bake for 1.5 - 2 hours, or until the pork is fork-tender and falls apart easily.

10. Once the pork is cooked, remove it from the oven and use two forks to shred it. Mix the pulled pork with the juices and orange zest in the pan.

11. Serve the orange and oregano pulled pork on top of rice or in tortillas for tacos. Garnish with additional orange zest, if desired.
