- 1 cup peanut butter
- 1 cup sugar
- 1 egg
- 1 teaspoon vanilla extract

1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease a mini muffin pan with olive oil and set aside.
2. In a medium sized bowl, mix together 1 cup of peanut butter, 1 cup of sugar, 1 egg, and 1 teaspoon of vanilla extract until well combined. You can use a hand mixer or mix by hand with a spoon.
3. Optional step: For an extra kick of flavor, you can also add in a pinch of dried spices such as cinnamon or nutmeg to the dough.
4. Take small spoonfuls of the dough and roll them into balls. Place each ball into the greased mini muffin pan, pressing down gently to form a cup shape.
