Peanut butter cookie cups

Pair the winning combination of peanut butter and dark chocolate in these cookie cups. They're perfect for a picnic or pick-me-up treat for the whole family


- 1 cup peanut butter

- 1 cup sugar

- 1 egg

- 1 teaspoon vanilla extract

- olive oil for greasing

- sea salt (optional)

- dried spices (optional)



1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease a mini muffin pan with olive oil and set aside.

2. In a medium sized bowl, mix together 1 cup of peanut butter, 1 cup of sugar, 1 egg, and 1 teaspoon of vanilla extract until well combined. You can use a hand mixer or mix by hand with a spoon.

3. Optional step: For an extra kick of flavor, you can also add in a pinch of dried spices such as cinnamon or nutmeg to the dough.

4. Take small spoonfuls of the dough and roll them into balls. Place each ball into the greased mini muffin pan, pressing down gently to form a cup shape.

5. Optional step: For a touch of sweetness and texture, you can sprinkle a little bit of sea salt on top of each cookie cup before baking.

6. Bake the cookie cups for 10-12 minutes, or until the edges are lightly golden.

7. Let the cookie cups cool in the pan for a few minutes before carefully removing them with a spoon or small spatula. They will be soft when they come out of the oven, but will firm up as they cool.

8. Serve and enjoy your delicious peanut butter cookie cups! You can store any leftovers in an airtight container for up to a week.
