With just three ingredients, these simple peanut butter cookies will delight kids and grown-ups alike – and they're gluten-free, too

- 1 cup creamy peanut butter
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup all-purpose flour

1. Preheat your oven to 350°F (180°C) and prepare a baking sheet by greasing it with olive oil.
2. In a large mixing bowl, combine 1 cup of creamy peanut butter and 1 cup of granulated sugar. Mix well until the sugar is fully incorporated into the peanut butter.
3. Add 1 large egg, 1 teaspoon of vanilla extract, and 1/4 teaspoon of salt to the peanut butter mixture. Mix everything together until well combined.
4. Gradually add 1/4 cup of all-purpose flour to the mixture. Stir until the flour is fully incorporated and a dough forms. The dough should be slightly sticky.
5. Using a spoon or cookie scoop, scoop out small portions of the dough and roll them into balls. Place the balls onto the prepared baking sheet, leaving about 2 inches of space between each one.
6. Use a fork to gently press down on each ball, creating a criss-cross pattern on the top of the cookie.
7. Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden brown.
8. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
