These blueberry pancake pies will be your new fav sweet treat!

Ingredients:

- 1 cup all-purpose flour

- 1 cup milk

- 2 eggs

- 1 tbsp olive oil

- Salt and pepper

- Dried herbs (such as thyme or rosemary)

- Optional fillings (such as cheese, cooked bacon, diced ham, diced bell peppers, diced onions)

Direction:

1. Preheat your pie maker according to its instructions.

2. In a mixing bowl, combine 1 cup of all-purpose flour, 1 cup of milk, and 2 beaten eggs. Whisk until the batter is smooth and there are no lumps.

3. Add 1 tablespoon of olive oil to the batter and mix well.

4. Season the batter with a pinch of salt and pepper, and a sprinkle of dried herbs like thyme or rosemary. Mix well.

5. If you're using any fillings, prepare them by cooking and dicing them into small pieces.

6. Open the lid of the pie maker and lightly coat each section with olive oil using a brush or spray.

7. Pour a small amount of batter into each section, filling it up to about 3/4 full.

8. Add your desired fillings on top of the batter in each section. Be careful not to overfill or the puffs may burst.

9. Close the lid of the pie maker and let it cook for 3-4 minutes or until the puffs are golden brown and crispy.

10. Carefully remove the puffs from the pie maker using a spatula and place them on a plate to cool.

11. Serve the pancake puffs warm with your favorite dipping sauce, such as maple syrup or hot sauce.

12. Store any leftover puffs in an airtight container in the refrigerator for up to 2 days. Reheat in the pie maker or in a toaster oven before serving.
