These rocky road doughnuts are a breeze to make in the pie maker and are filled with almonds, cherries and molten marshmallow for that festive rocky road flavour combo.
Ingredients:
- 1 cup all-purpose flour
- 1/4 cup cocoa powder
- 1/4 cup sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 cup olive oil
- 1/2 cup milk
- 1 egg
- 1 tsp vanilla extract
- Olive oil spray
- 1/4 cup mini marshmallows
- 1/4 cup chopped almonds
- 1/4 cup chocolate chips
- 1 tsp cinnamon
- 1 tsp powdered sugar (optional for garnish)
Direction:
1. In a large mixing bowl, combine the flour, cocoa powder, sugar, baking powder, and salt.
2. In a separate bowl, whisk together the olive oil, milk, egg, and vanilla extract.
3. Slowly pour the wet ingredients into the dry ingredients and mix until a dough forms.
4. Roll out the dough on a lightly floured surface to about 1/4 inch thickness.
5. Using a round cookie cutter or a drinking glass, cut out circles of dough.
6. Spray the pie-maker with olive oil spray and place one circle of dough in each pie-maker compartment.
7. In a small bowl, mix together the mini marshmallows, chopped almonds, chocolate chips, and cinnamon.
8. Spoon the mixture onto one half of each dough circle in the pie-maker.
9. Fold the other half of the dough circle over the filling and press the edges together to seal.
10. Close the pie-maker and cook for 5-7 minutes, or until the doughnuts are golden brown and cooked through.
11. Carefully remove the doughnuts from the pie-maker and let them cool on a wire rack.
12. Optional: Sprinkle powdered sugar over the top of the doughnuts for garnish.
