Polenta chips with pesto dipping sauce

Pair these golden parmesan-baked polenta chips with homemade basil pesto sauce.


- 1 cup polenta

- 2 cups water

- 1 tablespoon olive oil

- Salt

- Pepper

- Dried thyme

- Dried oregano

- Dried basil

- Dried garlic powder

- 1/4 cup pesto sauce


1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.


2. In a medium-sized pot, bring 2 cups of water to a boil.


3. Slowly pour in 1 cup of polenta, stirring constantly to avoid any lumps.


4. Reduce the heat to low and let the polenta simmer for 25-30 minutes, stirring occasionally.


5. Once the polenta has thickened and is smooth, remove it from the heat and stir in 1 tablespoon of olive oil.


6. Season the polenta with salt, pepper, dried thyme, oregano, basil, and garlic powder to taste. Mix well.


7. Pour the polenta onto the prepared baking sheet and spread it out evenly with a spatula, making sure it is about 1/2 inch thick.


8. Let the polenta cool and set for about 20 minutes.


9. Using a sharp knife, cut the polenta into long strips to create the chips.


10. Place the polenta chips on the baking sheet and bake for 25-30 minutes, or until they are crispy and golden brown.


11. While the polenta chips are baking, prepare the pesto dipping sauce. In a small bowl, mix 1/4 cup of pesto sauce with a pinch of salt and pepper.


12. Once the polenta chips are done, remove them from the oven and let them cool for a few minutes.


13. Serve the polenta chips warm with the pesto dipping sauce on the side.
