Quick Satay Peanut Stir Fry

Meet your new midweek secret weapon: an astonishingly quick Satay Peanut Stir Fry that tastes like what you get from Chinese restaurants. On the table in 15 minutes, made with your choice of protein – beef, chicken, pork, prawns/shrimp or tofu!

Ingredients:

- 1 package of tofu, drained and cubed

- 1 red bell pepper, sliced

- 1 small onion, sliced

- 1 cup broccoli florets

- 2 cloves of garlic, minced

- 3 tablespoons soy sauce

- 2 tablespoons peanut butter

- 1 tablespoon honey

- 1 tablespoon olive oil

- 1/2 teaspoon ground ginger

- Salt and pepper, to taste

- 1/4 cup peanuts, chopped (optional)

- Cooked rice, for serving (optional)

Direction:

1. In a small bowl, mix together the soy sauce, peanut butter, honey, olive oil, and ground ginger. Set aside.

 

2. In a large pan or wok, heat a tablespoon of olive oil over medium-high heat.

 

3. Add the cubed tofu to the pan and cook for 5-7 minutes, until lightly browned. Remove from pan and set aside.

 

4. In the same pan, add the sliced bell pepper, onion, and broccoli florets. Cook for 5-7 minutes, until the vegetables are tender.

 

5. Add the minced garlic and cook for an additional minute.

 

6. Pour the sauce mixture over the vegetables and stir to combine.

 

7. Add the cooked tofu back to the pan and stir to coat with the sauce.

 

8. Cook for another 2-3 minutes, until the sauce thickens and coats the vegetables and tofu.

 

9. Season with salt and pepper to taste.

 

10. Optional: Serve over cooked rice and top with chopped peanuts for added crunch.
