Raspberry & White Chocolate Cream Cheese Tarts

Raspberry and white chocolate has always been a classic combination and these deliciously rich and creamy white chocolate puff pastry tarts topped with tangy fresh raspberries will be a winner every time.

Ingredients:

- 1 sheet of frozen puff pastry

- 4 oz cream cheese

- 1/4 cup raspberry jam

- 1/4 cup chopped white chocolate

- 1 tablespoon olive oil

- 1 teaspoon vanilla extract

- Pinch of salt

- 1 teaspoon dried rosemary

- Powdered sugar (for dusting)

Direction:

1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

2. Roll out the sheet of frozen puff pastry on a lightly floured surface and cut it into 4 equal squares.

3. Place the puff pastry squares on the prepared baking sheet and lightly prick the surface with a fork.

4. In a small bowl, mix together the cream cheese, raspberry jam, chopped white chocolate, olive oil, vanilla extract, salt, and dried rosemary until well combined.

5. Spoon the cream cheese mixture onto the center of each puff pastry square, leaving a 1-inch border around the edges.

6. Fold the edges of the puff pastry up and over the filling, pressing gently to seal.

7. Bake the tarts for 15-20 minutes, or until the pastry is golden brown and puffed up.

8. Let the tarts cool for a few minutes before dusting with powdered sugar.
