Reuben Bowl

Skip the carbs and make this easy one-skillet recipe with cabbage, corned beef, sauerkraut, and Russian dressing. It has everything you love about the classic Reuben sandwich, without the bread.

Ingredients:

- 1 lb deli-sliced corned beef

- 1 cup sauerkraut

- 1 cup cooked brown rice

- 1/2 cup shredded Swiss cheese

- 1 tbsp olive oil

- 1 tsp garlic powder

- 1 tsp onion powder

- 1 tsp paprika

- Salt and pepper to taste

Direction:

1. Preheat your oven to 375°F (190°C).

 

2. In a mixing bowl, combine the cooked brown rice with the garlic powder, onion powder, paprika, and a pinch of salt and pepper. Mix well to evenly coat the rice with the seasoning.

 

3. In a separate skillet, heat 1 tbsp of olive oil over medium heat. Add the corned beef slices and cook for 2-3 minutes on each side, until heated through.

 

4. In a baking dish, spread the seasoned brown rice evenly on the bottom. Next, layer the corned beef slices on top of the rice.

 

5. Drain the sauerkraut and spread it over the corned beef. Sprinkle the shredded Swiss cheese on top.

 

6. Bake the Reuben Bowl in the preheated oven for 10-15 minutes, until the cheese is melted and bubbly.

 

7. Once done, remove from the oven and let it cool for a few minutes before serving.

 

8. Enjoy your delicious and easy Reuben Bowl as a hearty lunch or dinner option. You can also add any desired toppings, such as diced tomatoes or avocado, for extra flavor and nutrition.
