Roasted carrot & whipped feta tart

Make the most of budget-friendly carrots with this colourful veggie tart, topped with lemon rind curls and homemade carrot-top pesto


- 1 sheet of frozen puff pastry

- 4 medium sized carrots

- 1 cup of crumbled feta cheese

- 1 tbsp olive oil

- Salt and pepper

- Dried thyme

- Dried oregano


1. Preheat your oven to 400°F (200°C).

2. Thaw the frozen puff pastry according to package instructions.

3. Peel and slice the carrots into thin rounds.

4. In a mixing bowl, toss the sliced carrots with olive oil, salt, pepper, dried thyme, and oregano until well coated.

5. Place the seasoned carrots on a lined baking sheet and roast in the oven for 15-20 minutes, until tender and slightly caramelized.

6. While the carrots are roasting, prepare the whipped feta by combining the crumbled feta cheese with a dash of olive oil and a pinch of black pepper in a food processor. Blend until smooth and creamy.

7. Once the carrots are done roasting, remove them from the oven and set aside to cool.

8. Roll out the thawed puff pastry on a floured surface and place it on a lined baking sheet.

9. Spread the whipped feta mixture evenly onto the puff pastry, leaving a small border around the edges.

10. Arrange the roasted carrots on top of the whipped feta in a single layer.

11. Drizzle a little more olive oil on top of the carrots and sprinkle with some dried thyme and oregano.

12. Bake the tart for 20-25 minutes, until the pastry is golden brown and the edges are crispy.

13. Once done, remove from the oven and let cool for a few minutes before slicing and serving.
