Ginger and garlic are brilliant together with vegetables. This stir-fry is a big pan of feel-good, colourful vegetables smothered in a tasty sauce using both!
Ingredients:
- 1 tablespoon olive oil
- 1/2 teaspoon sesame oil
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 cup sliced carrots
- 1/2 cup sliced mushrooms
- Salt and pepper, to taste
- 1 tablespoon soy sauce
- 1 teaspoon chili flakes (optional)
- 1 teaspoon sesame seeds (optional)
Direction:
1. In a large pan or wok, heat the olive oil and sesame oil over medium-high heat.
2. Add the minced garlic and ginger to the pan and stir-fry for about 30 seconds, until fragrant.
3. Add the sliced bell pepper, broccoli florets, carrots, and mushrooms to the pan. Stir-fry for about 2 minutes, until the vegetables are slightly softened.
4. Season the vegetables with salt and pepper, to taste. You can also add 1 teaspoon of chili flakes for some heat, if desired.
5. Continue to stir-fry the vegetables for another 2-3 minutes, until they are cooked but still slightly crisp.
6. Drizzle 1 tablespoon of soy sauce over the vegetables and stir to coat evenly.
7. Optional step: Sprinkle 1 teaspoon of sesame seeds over the vegetables for extra flavor and crunch.
8. Remove the pan from heat and transfer the stir-fried vegetables to a serving dish.
9. Serve the sesame ginger garlic stir-fried vegetables hot as a side dish or over rice as a main dish.
