This quick and tasty main dish has a double hit of sesame oil and seeds that add nutty flavor to crisp peppers and shrimp.
Ingredients:
1 pound shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder
- 2 tablespoons sesame oil
- 2 tablespoons soy sauce
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 1 cup broccoli florets
- 1 cup snow peas
- 1 tablespoon sesame seeds
Direction:
1. In a small bowl, combine the salt, black pepper, garlic powder, and ginger powder. Mix well and set aside.
2. Heat the olive oil in a large skillet or wok over medium-high heat.
3. Add the shrimp to the skillet and sprinkle the seasoning mixture over them. Cook the shrimp for 2-3 minutes on each side, until they turn pink and are cooked through. Remove the shrimp from the skillet and set aside.
4. In the same skillet, add the sesame oil and soy sauce. Stir well to combine.
5. Add the sliced red and yellow bell peppers, onion, broccoli florets, and snow peas to the skillet. Stir-fry for 3-4 minutes, until the vegetables are slightly tender.
6. Add the cooked shrimp back into the skillet with the vegetables. Stir-fry for an additional 2-3 minutes, until everything is heated through.
7. Sprinkle sesame seeds over the stir-fry and give it a final stir.
8. Serve the sesame shrimp stir-fry over rice or noodles and enjoy! Optional: you can also add additional soy sauce or sesame oil for extra flavor.
