Ingredients:
- 4 chicken breasts
- 2 limes
- 2 avocados
- 1 red onion
- 1 red bell pepper
- 1 green bell pepper
- Olive oil
- Garlic powder
- Cumin
- Salt
- Pepper
- 1 bunch cilantro
- 1 jalapeno (optional)
Direction:
1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
2. Place the chicken breasts in a large bowl and squeeze the juice of 1 lime over them. Season with garlic powder, cumin, salt, and pepper to taste. Toss to coat the chicken evenly.
3. Cut the red onion and bell peppers into thin slices. Set aside.
4. In a separate bowl, make the citrus avocado salsa. Mash the avocados with a fork and add the juice of 1 lime, chopped cilantro, and diced jalapeno (if using). Mix well and set aside.
5. On a large sheet pan, drizzle some olive oil and spread it evenly. Place the seasoned chicken breasts on one side of the pan.
6. On the other side of the pan, spread the sliced red onion and bell peppers. Drizzle with olive oil and season with salt and pepper.
7. Bake in the preheated oven for 25-30 minutes, or until the chicken is fully cooked (internal temperature of 165 degrees Fahrenheit/74 degrees Celsius).
8. Once done, remove the sheet pan from the oven and let it cool for a few minutes.
