Sheet Pan Shrimp Boil

A mix of shrimp, andouille sausage, sweet corn, and potatoes make this Cajun summer favorite the most satisfying summer dinner.

Ingredients:

- 1 pound raw shrimp, peeled and deveined

- 1 pound baby red potatoes

- 1 pound corn on the cob, cut into 2-inch pieces

- 1 pound smoked sausage, sliced

- 1 small red onion, chopped

- 2 cloves of garlic, minced

- 3 tablespoons olive oil

- 1 tablespoon Cajun seasoning

- 1 teaspoon dried thyme

- 1 teaspoon dried oregano

- Salt and pepper to taste

Direction:

1. Preheat your oven to 400°F (200°C). Line a large sheet pan with aluminum foil and lightly grease with olive oil.

 

2. In a small bowl, mix together the Cajun seasoning, dried thyme, dried oregano, and a pinch of salt and pepper.

 

3. In a large mixing bowl, combine the peeled and deveined shrimp, baby red potatoes, corn on the cob, sliced smoked sausage, chopped red onion, and minced garlic.

 

4. Drizzle 3 tablespoons of olive oil over the ingredients in the mixing bowl and sprinkle the Cajun seasoning mixture over everything. Toss to coat all of the ingredients evenly.

 

5. Spread the shrimp boil mixture out evenly on the prepared sheet pan.

 

6. Bake in the preheated oven for 20-25 minutes, or until the shrimp is pink and cooked through, the potatoes are fork-tender, and the corn is lightly charred.

 

7. Once done, remove the sheet pan from the oven and let it cool for a few minutes.

 

8. Serve the sheet pan shrimp boil hot, garnished with fresh parsley or green onions if desired. Enjoy!
