Shrimp and Grits

There's a lot of richness going on here. Bacon! Butter! Cheese! To cut all the fat, you need some acid. Enter: freshly squeezed lemon juice. It brightens these bowl up BIG TIMEā€”so don't skip it.

Ingredients:

- 1 pound shrimp

- 1 cup grits

- Olive oil

- Salt

- Black pepper

- Garlic powder

- Onion powder

- Paprika

- 2 cups water

- Optional: Chopped green onions or parsley for garnish

Direction:

1. Prepare the grits according to package instructions. This typically involves bringing 2 cups of water to a boil, then adding the 1 cup of grits and reducing the heat to low. Let the grits simmer for about 20 minutes, stirring occasionally.

 

2. While the grits are cooking, prepare the shrimp. In a bowl, mix together 1 tablespoon of olive oil, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, and 1/4 teaspoon of paprika.

 

3. Add the shrimp to the bowl and coat them with the seasoning mixture.

 

4. In a pan over medium-high heat, add 1 tablespoon of olive oil. Once the oil is heated, add the shrimp and cook for about 2-3 minutes per side, until they are pink and cooked through.

 

5. Once the grits are done, remove them from the heat and stir in 1 tablespoon of butter for extra flavor and creaminess.

 

6. To serve, spoon the grits onto a plate and top with the cooked shrimp. Garnish with chopped green onions or parsley if desired.
