Shrimp Scampi

This shrimp scampi recipe looks elegant enough to serve to company, but it’s easy to prepare. The bright flavors of lemon and herbs enhance the shrimp. Serve it over pasta and wait for the compliments.

Ingredients:

- 1 pound shrimp, peeled and deveined

- 1/4 cup olive oil

- 4 cloves garlic, minced

- 1/4 teaspoon red pepper flakes

- 1/4 teaspoon dried oregano

- Salt and pepper, to taste

- 1/4 cup white wine

- 1/4 cup chicken broth

- 2 tablespoons lemon juice

- 1/4 cup parsley, chopped

- 8 oz angel hair pasta

- Grated parmesan cheese (optional)

Direction:

Instructions:

1. In a large skillet, heat olive oil over medium-high heat.

2. Add minced garlic and red pepper flakes to the skillet and cook until garlic is fragrant, about 1-2 minutes.

3. Add the shrimp to the skillet and season with dried oregano, salt, and pepper. Cook for 2-3 minutes on each side until shrimp turns pink and is fully cooked.

4. Remove shrimp from the skillet and set aside on a plate.

5. In the same skillet, add white wine and chicken broth. Bring to a simmer and let cook for 2-3 minutes until the liquid has reduced slightly.

6. Add lemon juice to the skillet and stir to combine.

7. Cook angel hair pasta according to package instructions. Drain and set aside.

8. Add the cooked shrimp back to the skillet and toss with the sauce.

9. Serve the shrimp scampi over a bed of angel hair pasta. Sprinkle with chopped parsley and grated parmesan cheese, if desired.
