Slow cooker beef stew with dumplings
Use your slow cooker to make this beef stew so it will be ready for when you get home after a long day. Nothing says winter warmer quite like a stew.
Direction:
1. In a large skillet, heat olive oil over medium-high heat. Add the stewing beef and cook until browned on all sides, about 5 minutes.
2. Transfer the beef to a slow cooker and add the chopped onion, minced garlic, carrots, potatoes, and celery.
3. In a small bowl, mix together the beef broth, salt, black pepper, dried thyme, dried rosemary, and bay leaf. Pour the mixture over the beef and vegetables in the slow cooker.
4. Cook on low heat for 6-8 hours or on high heat for 3-4 hours.
5. In a separate bowl, mix together the all-purpose flour, baking powder, and salt. Add in the cold butter and use a pastry cutter or your fingers to incorporate the butter into the flour mixture until it resembles coarse crumbs.
6. Slowly pour in the milk, stirring until a dough forms. It should be slightly sticky but not wet.
7. Drop spoonfuls of the dough onto the top of the stew, making about 8 dumplings.
8. Cover the slow cooker and continue cooking for an additional 30 minutes, or until the dumplings are cooked through.
9. Serve the beef stew in bowls, topping each serving with a dumpling. Garnish with fresh parsley, if desired. Enjoy your delicious and hearty slow cooker beef stew with dumplings!
