Slow cooker chicken tikka masala

Get this chicken tikka masala cooking in the morning and have dinner waiting for you when you get in – it's perfect for a cold winter evening.


- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

- 1 onion, chopped

- 3 cloves garlic, minced

- 1 tablespoon fresh ginger, grated

- 1 can (14.5 oz) diced tomatoes

- 1 can (13.5 oz) coconut milk

- 2 tablespoons tomato paste

- 1 tablespoon olive oil

- 1 teaspoon turmeric

- 1 teaspoon cumin

- 1 teaspoon coriander

- 1 teaspoon paprika

- 1 teaspoon garam masala

- Salt and pepper, to taste

- Fresh cilantro, for garnish (optional)

- Cooked rice, for serving (optional)


1. In a slow cooker, add the chicken, onion, garlic, and ginger.

2. In a separate bowl, mix together the diced tomatoes, coconut milk, tomato paste, olive oil, turmeric, cumin, coriander, paprika, garam masala, salt, and pepper.

3. Pour the mixture over the chicken and stir to coat evenly.

4. Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.

5. Once the chicken is cooked, taste and adjust seasoning if needed.

6. Serve the chicken tikka masala over cooked rice, if desired.

7. Garnish with fresh cilantro, if desired.
