Cooking lamb in a slow cooker makes the meat soft, tender and flavoursome. Our recipe ideas include curries, casseroles and slow-braises.
Ingredients:
- 1 lamb shoulder (about 4-5 pounds)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 teaspoons dried rosemary
- 2 teaspoons dried thyme
- 2 teaspoons dried oregano
- 3 cloves garlic, minced
- 1 onion, sliced
- 1 cup chicken broth
Direction:
1. Take the lamb shoulder and pat it dry with paper towels. This will help the seasoning stick better.
2. In a small bowl, combine the salt, black pepper, dried rosemary, dried thyme, and dried oregano. Mix well.
3. Rub the seasoning all over the lamb shoulder, making sure to cover every inch of the meat.
4. In a skillet over medium-high heat, heat the olive oil. Once hot, add the minced garlic and cook for 1-2 minutes until fragrant.
5. Place the seasoned lamb shoulder in the slow cooker and top it with the cooked garlic.
6. Add the sliced onions on top of the lamb shoulder.
7. Pour 1 cup of chicken broth into the slow cooker.
8. Cover the slow cooker and cook on low heat for 8 hours or on high heat for 4 hours.
9. Once the cooking time is up, carefully remove the lamb shoulder from the slow cooker and place it on a cutting board.
10. Let the meat rest for 10-15 minutes before slicing.
11. Serve the slow cooker lamb shoulder with your choice of side dishes, such as roasted vegetables or mashed potatoes, and enjoy!
