- 1.5kg leg of lamb

- 2 tablespoons olive oil

- 2 cloves of garlic, minced

- 1 teaspoon dried rosemary

- 1 teaspoon dried thyme

- 1 teaspoon dried oregano

- Salt and pepper

1. Start by preparing the leg of lamb. Rinse it under cold water and pat it dry with paper towels.

2. In a small bowl, mix together the minced garlic, dried rosemary, thyme, oregano, and a pinch of salt and pepper.

3. Rub the garlic and herb mixture all over the leg of lamb, making sure to coat it evenly.

4. Heat the olive oil in a pan over medium-high heat. Once hot, add the leg of lamb and sear for 2-3 minutes on each side until it develops a nice brown crust.

5. Transfer the seared leg of lamb to a slow cooker.

6. Set the slow cooker to low heat and cook for 6-8 hours, or until the lamb is tender and falls off the bone.

7. Once the lamb is cooked, remove it from the slow cooker and let it rest for 10-15 minutes. This will help the juices redistribute, making the meat juicier and more flavorful.

8. While the lamb is resting, use a spoon to skim off any excess fat from the slow cooker.

9. To serve, slice the leg of lamb into desired portions and drizzle with the juices from the slow cooker.
