Spiced salmon with traybaked sag aloo

Spice up a salmon fillet with the classic Indian side dish, sag aloo, for an easy midweek meal that's packed with omega-3 and ideal for feeding a crowd

Ingredients:

- 1 pound salmon fillets

- 2 tablespoons olive oil

- 1 teaspoon ground cumin

- 1 teaspoon ground coriander

- 1 teaspoon paprika

- Salt and pepper

- 4 medium-sized potatoes, cubed

- 1 large onion, chopped

- 2 cloves of garlic, minced

- 1 teaspoon turmeric

- 1 teaspoon garam masala

- 1 teaspoon chili powder

- 1 cup spinach, chopped

- 1 tablespoon lemon juice

Direction:

1. Preheat your oven to 400°F (200°C).

2. In a small bowl, mix together the ground cumin, coriander, paprika, and a pinch of salt and pepper.

3. Place the salmon fillets on a baking tray lined with parchment paper. Drizzle 1 tablespoon of olive oil over the salmon, then sprinkle the spice mixture evenly over both fillets.

4. In a separate bowl, mix together the cubed potatoes, chopped onion, minced garlic, turmeric, garam masala, chili powder, and a pinch of salt and pepper.

5. Drizzle the remaining tablespoon of olive oil over the potato mixture and toss to evenly coat.

6. Spread the potato mixture out on the baking tray around the salmon fillets.

7. Place the tray in the oven and bake for 20 minutes.

8. After 20 minutes, carefully remove the tray from the oven and flip the salmon fillets.

9. Add the chopped spinach to the tray, sprinkling it over the potatoes and around the salmon fillets.

10. Place the tray back in the oven and bake for an additional 10 minutes, or until the salmon is fully cooked and the potatoes are tender.

11. Once done, remove the tray from the oven and sprinkle the lemon juice over the salmon and potatoes.

12. Let the dish cool for a few minutes before serving. Enjoy your homemade spiced salmon with traybaked sag aloo!
